Made with beef chuck roast, thick pappardelle noodles, seasoned carrots, onions, and Asiago cheese sauce, this filling pasta dish also makes for delicious leftovers. 8 Servings 10 minutesPrep Time 135 minutesCook Time 0 peopleloved this print Ingredients Directions Ingredients 2 tablespoons Bertolli® Extra Virgin Olive Oil Rich Taste 2 pounds boneless beef chuck roast, trimmed,, cut into 1-1/2 inch chunks 2 medium carrots,, chopped (about 1 cup) 1 medium fennel bulb,, chopped (about 1 cup) 1 large onion,, chopped (about 1-1/2 cups) 1 jar (24 ounces) Bertolli® Olive Oil & Garlic Sauce 1/8 teaspoon crushed red pepper (optional) 1/4 cup chopped fresh parsley or thinly sliced basil leaves 1 pound pappardelle pasta (or your favorite wide pasta), prepared as directed on package and reserving 1 cup pasta water Directions Step 1: Heat oven to 350°F. Heat oil in Dutch oven or large oven-safe saucepan on medium-high heat. Season meat with salt and ground black pepper; add to pot. Cook 5 min., turning to brown all sides. Stir in vegetables. Cook 5 min. or until vegetables are softened, stirring occasionally. Stir in sauce and red pepper. Cover with tight-fitting lid or foil. Step 2: Bake 2 hours or until meat is fork-tender. Shred meat with 2 forks. Toss meat and sauce mixture with herbs, pasta and 1 cup reserved pasta cooking liquid. Garnish with additional parsley and shredded Parmesan, if desired. Step 3: Slow Cooker Variation: Omit oil. Combine all ingredients except pasta in slow cooker. Cook on HIGH 4-6 hours or on LOW 8-10 hours, until vegetables are tender and beef shreds with a fork.
